Mang Inasal
Mang Inasal, a growing food chain in the Visayas, spread out south into Mindanao and north to the Metro Manila area. It was founded in 2003 by a young entrepreneur named Edgar Sia. The first branch was housed in a car park in a Robinsons mall in Ilo-Ilo. By 2009, there are about a hundred Mang Inasal branches. One of the reasons for the fast spread is that Sia applied for a franchise license in 2005. Of course, there was also the fact that Mang Inasal became popular early on, probably by word of mouth. The food chain was also promoted via billboards and television ads. The food chain was a good representative of good Ilonggo food. Ilonggo refers to anything or anyone coming from Ilo-Ilo.
Mang Inasal specialties
So what is Mang Inasal all about? Mang Inasal is a respectful way of calling an older man. A person’s name should follow the word but in this case, Inasal follows. Inasal means grilled. Because there are a lot of food chains that offer grilled food in the Philippines, you may expect Mang Inasal not to be such a great deal. Still, the use of secret herbs and spices that made its grilled chicken extra flavorful made Mang Inasal a staple for some Pinoys. For that extra Filipino identity and flavor, the grilled chicken is pierced through with a bamboo stick. The accompanying rice is placed in a banana leaf. Of course, there is more to Mang Inasal than grilled chicken. You can take a bite at its grilled pork, fish, liver and other local delicacies.
Mang Inasal and the poultry industry
Mang Inasal makes use of local chicken. Like some Filipino food chains serving chicken, it helps the local poultry industry. Filipinos love their share of fried or grilled chicken. That fact greatly helps the poultry industry. However, Mang Inasal could have bought imported chicken. Instead, it buys local. So, the food chain contributes well to the local poultry industry. Still, pork is bought more often than the white meat although the Philippines’ chicken consumption has increased recently. Mang Inasal is proud to be part of that increase.
